      Chef Jimmy’s journey started not in a professional kitchen, but as a backpacker traveling throughout Vietnam. From the bustling streets of Hanoi to the vibrant energy of Saigon, he immersed himself in the country’s food culture—learning directly from the people, the regions, and the traditions that define Vietnamese cuisine.

      Each stop along the way became a source of inspiration. Every dish told a story. But his deepest influence comes from home. Chef Jimmy’s signature phở is rooted in family tradition, inspired by techniques passed down from his paternal grandmother since 1944. Her approach—built on patience, discipline, and respect for ingredients—remains the foundation of every bowl served today.

      By blending the clarity and depth of Northern-style phở with the richness and expression of Southern-style flavors, Chef Jimmy created a style that is both authentic and uniquely his own.
